Bio DOP is obtained from olives mainly from Bosana cultivars, harvested at the beginning of ripening. The result is a Green Fruity Extra Virgin with an intense flavor and strong references to thistle and artichoke. The taste is recognized by the balanced intense tones of bitter and spicy.
