Ask most diners where avocado belongs and they’ll probably say smashed on toast. But in commercial kitchens, Australian Avocados are doing far more than carrying the brunch menu. Recent research from Australian Avocados Foodservice, surveying more than 60 chefs, owners, operators and QSR executives across Melbourne, Sydney and Brisbane, found that 74% cite flavour and creamy texture as the biggest reason they use avocado on menus, followed by strong customer appeal (54%) and versatility of the ingredient (52%).
Unlike ingredients confined to a single menu category, avocado can move seamlessly from starters to desserts, giving operators the flexibility to maximise one ingredient across multiple dishes while reducing waste and simplifying prep. Australian-grown avocados also tap into growing demand for local produce, giving diners another reason to choose avocado-based dishes.
Where the Growth Is
One finding stood out above the rest: desserts.
When operators were asked where they saw the biggest opportunity to expand avocado usage, an overwhelming number ranked desserts in the number one spot.
It’s a trend already playing out in venues around Australia. Looking at recent collaborations with Sydney favourites Happyfield and Frank’s Deli, avocado-based desserts are generating strong customer engagement and curiosity, proving diners are increasingly open to seeing avocado in unexpected ways.
The shift also reflects changing consumer expectations. Today’s diners are looking for ingredients that deliver both flavour and nutritional value and avocado naturally ticks both boxes. Its creamy texture, healthy fats and fibre make it a versatile ingredient that can add richness without relying on dairy, while aligning with growing demand for wholesome, produce-led dishes.
Putting Desserts to Work
Chef Benjamin Cooper is embracing this opportunity with his palm sugar, coconut and Australian Avocado butterscotch, one of the dishes he’ll showcase live at Fine Food Australia.
Using avocado as a natural thickener, the sauce delivers richness, body and a silky texture while remaining completely vegan. The result is a decadent caramel-style sauce that works perfectly as dulce de leche over ice cream, plated desserts or as a component across multiple menu applications.
“Avocado brings a natural creaminess that’s difficult to replicate with other ingredients,” says Cooper. “Its healthy fats create a mousse-like texture that feels indulgent but light and that soft green hue adds a fresh, contemporary edge that’s striking on a plate.”
While desserts represent an exciting opportunity, sauces and dressings remain one of the easiest ways to introduce avocado across existing menus. With 100% of the flesh usable, they’re a high-yield application that delivers both flavour and value.
Waste Less, Create More
The research also identified one of the biggest barriers to using avocado more widely: managing ripeness.
The key is matching ripeness to the application. Firmer fruit is ideal for slicing in presentation-led dishes, while softer or overripe avocados are perfect for smashed avocado, desserts, smoothies, sauces and dressings. Rather than becoming waste, overripe fruit becomes an opportunity to maximise yield and profitability.
Checking ripeness is simple. Gently press near the neck of the avocado. If it doesn’t yield, leave it at room temperature for another day or two, ideally near other fruit to encourage ripening. Once it gives slightly to gentle pressure, it’s ready to use.
