Bake Skills Australia

Following Industry research & feedback, Bake Skills has a new look in 2018 with a move away from state teams and a focus on providing the Bake Skills opportunity to Individuals & their employers.

This year’s schedule provides the opportunity for teams to come up with something new and innovative.

As such, this year’s Bake Skills Australia will host 2 separate competitions – The 2018 Bake Skills Australia National Pastry Chef Championships & The 2018 Bake Skills Australia National Baking Championships.

Meet our four 2018 Pastry Chef Champion finalists!


  • Antonio Marcora from NSW. At 19 years old, Antonia works at the Adriano Zumbo patisserie in Lane Cove, and completes his training at Ryde TAFE.
  • Lucy Butcher from QLD. At age 24, Lucy works at Chouquette Boulangerie Patisserie in New Farm and completed her training at Baking Industry Training Australia (BITA) in Brisbane.
  • Shannon Krstanac from Victoria age 21, works at the Coffee Club & Patisserie in Point Cook and is training at William Angliss TAFE Institute.
  • Jonathon Mimlich. At age 21, is from South Australia and works at the Adelaide Oval. He is completing his training at the Regency TAFE in Adelaide.

Meet our five 2018 Baking National Championship finalists!


  • Kodei Page-Brooks is aged 22 and from NSW. Kodei works at Brickfields Bakery in Marrickville and is training at the Ultimo TAFE in Sydney.
  • Khai Quinn is from northern NSW and is 22 years old. Khai is training at Tamworth TAFE and currently works at Smeatons Bakery in Glenn Innes.
  • Hannah Macdonald is 21 years old and from South Australia. Currently working at the Bakers Delight in Stirling, she is training at the Regency TAFE in Adelaide.
  • John Mylott is age 19 and lives in NSW. He is training at Hunter TAFE in Newcastle, and is working for Dolcettini in Dural.
  • Natasha MacLeod lives in Victoria and is 19 years old. She is currently both working and training at the William Angliss Institute in Melbourne.

Monday 10 September

Judging commences for Puff, Choux & Shortcrust pastry items including Mille Feuille, Vol au Vents, Palmiers, new age eclairs, Paris Brest, Profiteroles & a Gateau Saint Honore.

Tuesday 11 September

Judging commences for the Callebaut chocolate innovation Entremet, baked cheesecakes & a decorated special occasion cake.

It's time for the announcement of the 2018 National Pastry Chef Champion, presented by special guest - Australia's Queen of Chocolate (& former Bake Skills winner!), Kirsten Tibballs.

Wednesday 12 September

Judging commences for Rye & Turkish breads; Croissants; Baguettes; Brioche & 4 strand plaits. A Winston Knot challenge will also be judged.

Thursday 13 September

Judging commences for flavoured Rye Cobs, a White Vienna sourdough & the finalists decorative bread showpiece!

It's time for the announcement of the 2018 National Baking Champion and the winner of the "One on One" training course with Australian Baking Team Member, Dean Tilden.
