Trav Harvey is the CEO of HospoDECLARE, a pioneering initiative empowering hospitality venues to lead in sustainability through practical, everyday actions that reduce waste, emissions, and disposables.Trav is a chef, educator, and food sustainability leader known for his work in zero-waste cooking and social impact. As Exec Chef at OzHarvest, he was instrumental in launching Refettorio Sydney with Massimo Bottura, coordinating international sustainability events for the UN Environmental Program in Sydney, Lima, Bangkok and Saigon, and he created Australia’s first zero-waste pop-up, “Harvested,” in 2013.
His career blends hands-on culinary expertise with large-scale program design, always grounded in community and inclusion. He has appeared regularly on national TV and food festival stages, Trav continues to advocate for food systems that are smarter, fairer, and better for the planet.
