Native to China, Amur sturgeon comes from the Amur River along the China–Russia border. Matured over 10–12 years, it yields rich, mellow caviar with smooth pearls that release buttery notes and a gentle salmon-like umami. Hints of hazelnut and herbs lead to a creamy, lingering finish.
