Jim Derzekos

Jim started his career in hospitality once completing his higher education. He attended William Angliss College studying a Diploma in Catering Operations from 1985 to 1987.

Jim is an operator with extensive experience in a variety of hospitality venues since 1985 and became an owner/operator from 1994. He has built a wide variety of cafes, large sized restaurant pubs and a large multipurpose venues licensed for 660 people. He has owned businesses as a sole operator and was the Operation Manager of the AFTER DARK MANAGEMENT group (ADM) that owned and operated multiple venues from 1997-2009.

The ADM group built and operated the first Waterfront Venue to open at the Docklands in Melbourne, ‘THE LOUNGEROOM’ in MAB’s development at NEW QUAY. The group also opened the first waterfront venue at WATERFRONT CITY docklands, ‘FIX/JAMM ROOM’ in development with ING. In 2007, the AFTERDARK GROUP acquired the historic WATER RAT HOTEL in South Melbourne which was at the time vacant. The group proceeded to redevelop and restore the site into a once again iconic modern Australian Pub still operating successfully today. Jims role for the afterdeck group was to New Business Development and the Operations Manager.

Most recently Jim has opened and is operating a successful beach side cafe 38 SOUTH in Seaford Victoria with his 2 sons.
